Annual monsoon winds cause the beans to expand in size and acquire their unique, mellow flavor. A recreation of over 150 years British coffee cultivation on the Southern Slopes of India and transporting the raw coffee to Europe that takes 6 months journey. The long journey exposed the coffee to rain and humidity and causing the coffee characteristics to change exposing coffee cherries to hot, humid weather and wind, making them swell, fade and changes in flavor.
